Spiced Christmas Ginger Cake

Ingredients


  • 1 and 3/4 cups all purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground ginger

  • 1 teaspoon cinnamon

  • 1 pinch nutmeg

  • 1 pinch salt

  • 1/2 cup melted butter

  • 1/2 cup brown sugar

  • 1/2 cup molasses or treacle

  • 1 egg

  • 3/4 cup warm milk

  • 1 teaspoon vanilla

Instructions


  1. Heat oven to 180 C. Grease a loaf pan or small square tin.

  2. In a bowl, whisk flour, baking soda, ginger, cinnamon, nutmeg, and salt.

  3. In another bowl, mix melted butter, brown sugar, and molasses until smooth.

  4. Add egg and vanilla. Mix well.

  5. Add dry mixture and warm milk little by little. Stir until smooth.

  6. Pour into the tin and bake 35 to 40 minutes, until a skewer comes out clean.

  7. Let it cool. Dust with powdered sugar and add candied ginger or cranberries if you like a little glamour.
